Sunday Bite
Thin-Crust Pizza with Fresh Figs,
Goat Cheese & Arugula

“Aaah, a marriage made in heaven. A frog and a pig. We can have bouncing baby figs.” -The Muppet Show’s wind-up Robot Kermit, who, unlike real Kermit, openly showed his affection for Miss Piggy
And then goes along. I love it when food blogs have a story along the recipe. I guess I got hooked to that concept when I first stumbled upon La Tartine Gourmande...
Ingredients:
For the pizza dough (adapted directly from Rose Levy Beranbaum’s The Bread Bible):
• 3/4 cup unbleached all-purpose flour, sifted
• 1/2 tsp. instant yeast
• 1/2 tsp. sugar
• 1/2 tsp. salt
• 1/3 cup room-temperature water
• Extra Virgin Olive Oil
For the toppings:
• Extra Virgin Olive Oil
• 3-4 large fresh figs
• Good handful of arugula leaves
• 3-4 tbsp. goat cheese
• Balsamic Vinegar
• Honey
• 2-3 large fresh basil leaves, washed, dried well, and cut en chiffonade
• Small sprig of fresh rosemary
• Kosher salt & freshly ground black pepper
