RESTAURANT REVIEW: Fish&Zelenish



ABOUT:

Fish&Zelenis je prekrasni restoran koji se nalazi u novosadskoj Skerlicevoj ulici. Atmosfera kojom odise je istovremeno neobicno lokalna i razdragano pacifisticka. Ta neka dobra tekovina globalizma, mesanja, putovanja, komunikacije i povratka kuci. Nekako kao Svuda podji, svojoj kuci dodji. Jedno kontrolisano fish mish mash mesto sa duhom koji ne moze da se iskonstruise, izmisli i odglumi. Njega nose prvo partneri koji su ga zamislili, a onda i svi pazljivo odabrani ljudi koji sinhrono jasu isti talas. Svako u svom stilu.



I cim sa pomislila, ocarana jelovnicima koje je priredio Peter Gregson tim, zapucali smo na premijerni rucak u F&Z. Ovo je scena koja zasluzuje paletu. Stilizovana verzija bakinog vojvodjanskog doma, sve lezerno, a pazljivo odabrano i prikupljeno.



SERVICE:
Bas, bas fini ljudi. Zivi, opusteni, dragi, nasmejani. Upuceni u jelovnik, sa dobrim tajmingom i odlicnim pokrivanjem oba dela restorana - prvog, starog, kuhinjskog, zivopisnog, i onog novog koji je more comfy i pravi izbor za svaki sledeci put. First timerima preporucujem terasu odmah iznad kuhinje u starom delu restorana, narocito ako ih proces pripremanja hrane zanima kao mene.




FOOD:
Gore su nase namirnice koje se spremaju za termicku obradu. Na tanjiru fish - losos kotleti i raznjici od kocaka lososa, shrimpova i maslinica, a na zutoj dasci zelenis. Mmmmm... I krem corba od sargarepe, prva na listi preporuka dana. Prva ideja koja mi je proletela kroz glavu, damn, moramo da kupimo blender! A onda losos na pirincu sa kockicama sargarepe i tikvica, sve preliveno kremastim sosom od bosiljka i gorepomenuti raznjici na gorepomenutom grilovanom povrcu. Ne mozete ni da zamislite koliko je sve to bilo dobro ispeceno, proprzeno, skuvano. I jasno je da nista nije slucajno. Masters. Sprinklovano persunom.



Postena kolicina limuna, malo za cedjenje, malo ca prstice. Na kraju panakota prelivena cokoladom sa zelenim biberom. Taj lovely pikantni preokret oseticete tek posle par zalogaja.



DESIGN:
Ako kazemo da smo apsolvirali da je jelovnik piece of art, srecna sam da sam videla da su i ljudi koji rade u F&Z toga svesni. I tekstovi u njemu su sjajni, zabavni, vrcavi, zahvaljujuci tim vrcavim crticama nemam pojma koliko smo cekali klopu, 10 minuta, pola sata, dva sata...

Pored toga, ovako zeli da izgleda svako neo-salas mesto, ali retko kome to uspeva. Tacnije, gotovo svi preteraju. Eklekticizam i hrabra mekoca. Premalani namestaj, malo recnog, malo kafanskog, svega po malo, a svega koliko treba. I zacina, i komunikacije, i muzike.

Lepa illy soljica za kraj, jako dobra kafa i ah, dirljivo brendirani secercic. Nema zutog, ma 'ajte, il ti treba secer il ti ne treba, what's with zuti secer anyway... Blindruk na vrlo plavoj knjizici za racun, a racun, drazestan u svom cepkanju na stavke. See for yourself.



OVERALL:
Jelovnik nismo ukrali, mladic nam je rekao da im je od 20 koliko su stampali u reprintu ostalo samo 9 komada. Uostalom, tamo mu je i mesto.

ABOUT:
Fish&Zelenis is a wonderful restaurant in Novi Sad, Serbia. It's name could be translated something like Fish&Veggies. The atmosphere you'll find there is incredibly local and at the same time joyfully pacificist. A fine example of the good spirit gained thanks to globalism - mixing, traveling, communicating, getting back home. One properly controlled fish mish mash joint with a spirit you cannot fake, make up and act. It's the people that founded this place and all the carefully picked people that work there that make this place. They all ride the same wave, every one of them in his/hers own style.
And as soon as I wished for it, dazzled with the menus Peter Gregson team fixed brilliantly, we hit the road and got here for our premiere Saturday lunch. And waiting there is a scene that deserves a palette right away - a stylized version of my grandma's home in Vojvodina, everything easy going and closely picked and gathered. All wonderous pieces scatered around in such a cozy, neat manner.

SERVICE:
Really nice people. So alive, relaxed and busy, dear and smiling. Now what they'r offering, will help with the menu, good timing, holding everything under control, covering both the original and the new restaurant wing - just across the narrow Skerliceva street. The original part of the restaurant is the one with the kitchen, picturesque and my reccomendation for the first visit to Fish&Zelenis. Especially if your into food preparation, tips and tricks like I am.

FOOD:
Check the image of our meals getting ready to get warm. The plate holding our salmon steaks and salmon, shrimp and plive kebabs, the yellow chopping board holding all our veggies. Yummmm... And our lovely carrot cream soup, the first thing on the daily menu. The forst thing that crossed my mind when tasting the soup - damn, we MUST get a blender! Then, salmon on rice with carrot and zucchini squares, all topped with fresh basil creamy sauce and those skewers I mentioned with those veggies I mentioned, grilled. You cannot imagine how well it was cooked, just right. All sprinkled with the parsley. A good some of lemon boats, a bit to zest a bit to clean you fingers after diving into that lovely fish. Finally, panacotta covered with dark choco and green pepper sauce. You'll get that fine piquant twist after a few of those cool bites.

DESIGN:
After I mention once again that the menu itself is a piece of art, I have to add that I'm so glad I've seen it being loved at the restaurant's staff. And the little stories inside, paragraphs on people, food and the place are so good! Makes the time you wait for your food fly by. This is how every new salas place in Vojvodina wants and should look like, but rarely do. Almost everyone goes over the top, the thing gets kitchy and tacky. I takes so much - craft, time, energy, eclectic sense for combining. Roughly painted old restored furniture, a bit of riverish, a bit of old tavernish, a bit of all things but with a perfect balance. Everything here is just right - spices, music, communication. And at the very end, a pretty illy coffee cup and a really good coffee too, alongside - sugar. No brown sugar, c'mon, you either need sugar or you don't, what's with brown sugar anyway... Then logo debossed on the check book's bright blue front cover.

OVERALL:
We did not steal the menu, the guy told us that after a reprint they have 9 of 20 left. After all, that is where they belong in the first place.

  1. Po objavljuvanju review-a kod tebe, odjurila sam u Fridu. Jel sad treba da idem u NS?
    Seriously, mislim da treba neko da ti da prostor u nekoj novini jer nigde nisam citala kombinaciju kritike hrane i ambijenta u kojoj je konzumiras.
    Sto se tice blendera, to je must. Ja stalno pravim te supe, to mi je klopa za posao. Prakticno i rekla bi zdravo.

    buduci da sam za F&Z vezana po vise osnova, osecam se TAKO DOBRO posle ovog teksta :)))
    a, i kada bi preskocili moje subjektivno i sebicno odusevljenje, ostao bi komentar: ODLICNA recenzija! prste da polizes :)

  5. nikad nije kasno da se klopa strasno. f&z i dalje rules! u subotu smo zbog njih svratili u nevi sad, pa smo usput otisli i na exit. ali stvarno je tako bilo.
